Monsoon is upon us and that can only mean one thing- an unreasonable amount of cravings for chai & hot snacks fresh off the frying pan. Here’s my recipe for Stuffed Egg Pakoras. You could put anything of your choice in the stuffing. I’ve put pickled green chillies (recipe here) & they taste heavenly! Enjoy!
INGREDIENTS:
6 boiled eggs
2 tbsp onion
1 small green chilli
1 tbsp grated cheese ( add more according to preference)
Salt to taste
1 tsp Kasuri Methi
2 eggs (for coating)
Oil for frying
PROCEDURE:
1. Slice boiled eggs in 1:4 ratio and scoop out all the yolk.
2. To a bowl, add yolks of 3 eggs, 2 tbsp onion, 1 chopped green chilli, 1 tbsp grated cheese(more if you like ;) ), salt to taste and 1 tsp kasuri methi. Mix well.
3. Fill this stuffing into the hollow egg whites.
4. Beat 2 eggs in a bowl.
5. Coat stuffed boiled eggs in the beaten egg and fry until golden brown.
6. Hold two parts of the egg together with a toothpick and serve with dip :) Enjoy !
