  • 5-6 medium sized potatoes

  • 1 medium sized onion

  • 4tbsp mustard oil

  • 1 tbsp jeera seeds

  • 1 tbsp saunf (fenugreek) seeds

  • 1/2 tbsp jeera dhaniya powder

  • 1-2tbsp red chilli powder (more according to your preferred spice levels)

  • 1/2tsp haldi

  • 5-6cloves crushed garlic

  • 2 chopped green chillies

  • 1/2 cup tomato purée (or fresh chopped tomatoes)

  • 2 tbsp fresh coriander leaves

  • 1 cup water

  • Dallae chilli paste (optional)

PROCEDURE:

1. Boil 5-6 medium sized potatoes until fully cooked and mash them. Set aside.

2. In a hot wok, add 4 tbsp mustard oil.

3. Once the oil starts smoking, add 1tbsp jeera and saunf seeds. Once they start popping, add finely chopped onions.

4. Sauté for 2-3minutes then add 1/2tsp haldi powder, 1-2 tbsp red chilli powder, 1 tbsp jeera dhaniya powder, salt to taste and mix well.

5. Add 5-6 cloves of crushed garlic and 2 chopped green chillies. Cook for 2-3 minutes.

6. Add 1/2 cup tomato purée or fresh tomatoes and coriander leaves. Mix well and add 1 cup water to the mix.

7. On slow heat, wait for it to come to a boil. Check and adjust for salt at this stage. You could also add red chilli powder or dale chilli paste for a spicier version.
