Pav Bhaji Recipe | Indian Street Food Snack


Pav Bhaji is an iconic fast food dish from Mumbai that consists of a thick vegetable curry paired with pav bread buns. The vegetables I have used for this recipe are the regulars- onions, potatoes, bell peppers, carrots and beans. You could substitute any of these with other vegetables that are in your kitchen that you want to utilise.


The dish is best served with extra butter on top and lime and chopped onions. This recipe serves 5-6 people so don't be intimated by the amount of butter used :)


INGREDIENTS:

  • 5-6 potatoes

  • 1 tbsp oil

  • 5 tbsp butter

  • 6 inch cinnamon bark

  • 2 onions (finely chopped)

  • 1 tbsp chopped ginger

  • 5-6 garlic cloves (chopped)

  • 2 green chillies

  • 2 cups beans(finely chopped)

  • 1 cup carrot (finely chopped)

  • 2 cups capsicum (finely chopped)

  • 2 cups cabbage (finely chopped)

  • 1 cup peas

  • 1/2tbsp haldi (turmeric powder)

  • 1 tbsp red chilli powder

  • 1.5 tbsp jeera dhaniya (cumin+coriander) powder

  • 1.5 tbsp pavings bhaji masala

  • 1 cup tomato puree

  • 1/2 tbsp black pepper powder(optional)

  • 1-2 cups water

  • 1/2 cup kasuri methi

  • Pav buns


PROCEDURE:


Boil potatoes until cooked. Dice into cubes and set aside.


In a pot, add oil and 3 tbsp butter. Adding oil to butter ensures that your butter doesn't brown.


Add cinnamon sticks, finely chopped onions, ginger and garlic. Sauté until onions turn golden brown.


Add beans, carrots, capsicum and cabbage along with haldi, red chilli powder and jeera dhaniya powder. Mix well and cook for 5 minutes. You can remove the cinnamon sticks at this point.


Add salt to taste, pav bhaji masala, potatoes, 1 tbsp ghee and tomato puree. Mix well and simmer for 5 minutes.


Mash the contents well with heat still on.


Add 1-2 cups of water. Cover with lid and cook on low heat for 15 minutes.


Add peas, kauri methi or coriander and cook for 2 minutes.


Apply butter on your pav buns and toast for 5-10 minutes.


Serve with chopped onions and lime on the side. Enjoy!
