Shyaphalay Platter Recipe | Spicy Cheese Chutney + Glass Noodles Salad

INGREDIENTS:


For Shyaphalay:

  • 500g chicken mince (or beef)

  • 250g celery

  • Salt to taste

  • 3 large Onions

  • 1 tbsp ginger garlic paste

  • 1 tbsp soy sauce

  • 1 tbsp garlic granules (or chopped fresh garlic)


For Glass Noodles Salad:

  • 150g glass noodles

  • Salt to taste

  • 1 small carrot

  • 1 small cucumber

  • 1 red tomato

  • 1 green tomato (optional)

  • 1 tbsp black pepper powder

  • Juice of a lime

  • 1 tbsp Chilli Flakes

  • 1 tbsp red chilli powder

  • 1 tbsp garlic granules (optional)

  • 2 tbsp sesame oil


For Cheesy Chutney:

  • 7-8 green chillies

  • 9-10 garlic cloves

  • 1 small onion

  • 1 tomato

  • 1 cup fresh Churpi (or grated Paneer)

  • 2 cheese slices


PROCEDURE:

For SHYAPHALAY -


1. Add 1 tsp salt to 250 g of celery. Mix well.



2. Sauté in 2 tbsp oil for 5-10 minutes (We're going to cook this fully later).


3. In a separate pan, add 3 tbsp oil. Once the oil is hot enough add 3 large chopped onions (Onions help make the shyaphalay juicy, so be generous. If you are cooking beef, I suggest you increase the quantity by 1 onion).




4. Once onions caramelise, add chicken mince, 1 tbsp salt, 1 tbsp ginger garlic paste, 1 tbsp soy sauce, 1 tbsp garlic granules (or chopped fresh garlic), the celery we sautéed earlier and mix well.



5.Cover with lid and cook on low heat for 10 minutes (15 if using beef).


6. Mix around 500g flour with water and knead dough.


7. Roll out the dough into a flat sheet ( oil the surface you are rolling out on. Using powdered flour ruins the texture of the dough ).



8. Cut out round shapes out of the dough ( you can use a cookie cutter or a lid with sharp edges.



9. Place mince meat between two circles and seal the edges with a fork.



10.Deep fry until golden brown.


For Glass Noodle Salad-



1. Boil Glass Noodles in water with a sprinkle of salt.



2. In a bowl, add the boiled glass noodles, 1 small carrot, 1 small cucumber, 1 red tomato, 1 green tomato (optional), 1 tbsp black pepper powder, Juice of a lime, 1 tbsp Chilli Flakes

1 tbsp red chilli powder, 1 tbsp garlic granules (optional), 2 tbsp sesame oil and mix well. Done!


For CHEESE CHUTNEY-


In a blender, add 7-8 green chillies, 9-10 garlic cloves, 1 small onion, 1 tomato, 1 cup fresh Churpi (or grated Paneer) and 2 cheese slices. Blend into a smooth paste and serve!
