The incessant rains & the need to nourish the body with Immunity building food has me cooking up a lot of soup than usual. I’d put up a recipe for a Quick & Easy Chicken Soup with mince meat earlier that you can whip up when you’re feeling under the weather & need to cook for yourself. This Chicken Soup here involves more steps & ingredients but it’s still easy to make. I’ve added Tofu and Spinach, you can add whatever vegetables you have (this is a great way to make use of vegetables in the fridge that need to be used asap). I’ve also used bone-in pieces for this soup. You could shred the chicken and use it for another recipe (I usually stir fry mine with some chillies & sauces. It pairs well with rice, can be used as a filling for tacos for snack time, the possibilities are endless!). Enjoy!
INGREDIENTS:
500g bone-in chicken pieces
2 tbsp oil
1 tsp jeera (cumin) seeds
Thumb of a ginger (finely chopped)
1 green chilli (slit)
1 medium sized onion (finely chopped)
1 tsp haldi (turmeric powder)
Salt to taste
1 tbsp black pepper powder
2 tbsp soy sauce
1 large tomato (finely chopped)
Fistful coriander leaves
2.5 cups water
200g tofu cubes
250g spinach
PROCEDURE:
1.To a heated pressure cooker, add 2 tbsp oil.
2.Once oil is hot enough, add jeera seeds, slit green chilli and chopped thumb of a ginger.
3.Add finely chopped onions and sauté for 5 minutes on low heat.
4.Add chicken pieces, salt to taste, haldi, black pepper powder, soy sauce, chopped tomato, fistful coriander leaves and water.
5.Cover pressure cooker lid and leave on medium heat for 5 whistles.
6.Open lid, transfer the chicken pieces to a bowl. You can save this to add some to the soup later and the rest you can shred to use for a separate recipe)
7.Strain the soup in the pressure cooker through a colander into a seperate pot on low flame.
8.Adjust for salt, add some shredded chicken or a few bone-in pieces if you like, add coriander leaves and tofu cubes.
9.Turn off heat, add spinach leaves and cover with lid for 5 minutes to allow the spinach to cook.
