Quick & Easy Chicken Soup Recipe

Heres the recipe for this quick & easy chicken soup recipe that’s comfort in a bowl.Now more than ever, we need to be mindful our immunity and the food we consume. This chicken soup is quick and easy to make at home and full of fresh and healthy ingredients. I made it when I myself was feeling under the weather & felt so much better after. I used mince meat since that was what I had at home, but you could use any cut of meat, just make sure you adjust cook time accordingly. INGREDIENTS:


  • 1 medium sized onion

  • 1.5 tsp oil

  • 1 green chilli

  • 1 large tomato

  • 250g mince chicken (or any other meat/cut)

  • Salt to taste

  • 1.5 tsp ginger paste or freshly chopped ginger

  • 1 tsp black pepper powder (optional)

  • 1.5tbsp soy sauce

  • 2 cups water

  • Fistful coriander (optional)

  • Glass noodles (optional)

  • 1 carrot (or any veggies in the fridge like peas, cabbage etc)

PROCEDURE:


To 1.5tbsp oil, add 1 medium sized onion (sliced) and 1 slit green chilli.


Sauté until onions soften, then add 1 large chopped tomato and 250g mince chicken. ( you could add any cut of chicken or meat. This is what I had available at home. Ensure to adjust cook time accordingly).


Add salt to taste, a thumb of chopped ginger or 1.5tsp ginger paste, 1.5tbsp soy sauce and 1 tsp black pepper powder(optional). Mix well.


Cover with lid for 5 minutes.


Add glass noodles(optional) and sliced carrots or any vegetables you have in your refrigerator.


Add 2 cups water and fistful coriander. Adjust for salt and cover again for 10 minutes on low heat.
