Chicken Quesadillas Recipe


A Quesadilla is a Mexican dish which is a shell of flour dough filled with primarily cheese, and other ingredients such as meat, salsa, beans etc. It is so simple and easy to make at home for snack time. In Indian homes chapattis are a staple and this is one way to utilise chapattis in a different dish. The crisp you develop when grilling the outer shell provides an interesting texture and who doesn't love a good cheesy snack? Enjoy!


INGREDIENTS:


  • 2 round tortillas/chapatis

  • 100g shredded chicken

  • 2 tbsp oil

  • 5 garlic cloves (chopped)

  • 1 medium onion

  • 1 tomato

  • 1 tbsp red chilli flakes

  • 1 tbsp garlic granules (optional)

  • 1 tbsp Italian mixed herbs

  • Salt to taste

  • 1 tsp red chilli powder

  • 6tbsp shredded cheese

  • 200g spinach (optional)


PROCEDURE:


1.To a heated pan with 2tbsp oil, add chopped onions, tomatoes, garlic, red chilli flakes, garlic granules (optional) , Italian mixed herbs and salt to taste. Mix well and sauté for about 5-6 minutes on medium heat.


2.Add spinach leaves and half a cup of water. Cook on high heat until the water dries up. Set aside.


3.In a separate pan, sauté the shredded chicken (pre-cooked). I shredded the chicken from my left-over Chicken Soup. This is a great way to use leftover chicken. If using fresh chicken, then cook the shredded chicken for longer. For leftover pre cooked chicken, sauté on high heat for 5 minutes to develop a crisp exterior.


4.For the tortillas/chapattis you can use ready made ones like I did, or make your own.


5.To assemble your quesadilla, place 1tbsp shredded cheese on the upper half of your tortilla, followed by 2 tbsp of the veggies, 2 tbsp shredded chicken and 2tbsp more shredded cheese. Fold the shell in half and press gently.




6.Oil pan/grill and grill each side of the tortilla until golden brown (2-3min on medium heat). Slice in half and Serve :)
