Vada Pav Recipe | Indian Street Food Snack

One of my favourite street food snacks that I’ve come to love through the decade and a half I spent in Maharashtra. No one does Vada Pav like them, which is why this recipe is made the Maharashtrian way. The roasted coconut in the chutney makes all the difference! Please do not skip this step. You could substitute coconut pieces with coconut oil but please do add coconut in some capacity in the chutney. Let me know if you have any queries regarding the recipe. Enjoy!


INGREDIENTS:

  • 7-8 potatoes

  • 1 tbsp rai seeds (black mustard)

  • 1 tsp hing (asafoetida)

  • 2 green chillies (chopped)

  • 2 tsp haldi (turmeric powder)

  • Salt to taste

  • Curry leaves (19-20 pieces)

  • 1 cup besan (gram flour)

  • 1 tsp red chilli powder

  • 1.5 cups water

FOR CHUTNEY:

  • 14-15 garlic cloves

  • 1/2 cup peanuts

  • 5 tbsp til (sesame seeds)

  • 1 tbsp red chilli powder

  • 1 tbsp coriander powder

  • Salt to taste

  • 1/2 cup fresh coconut pieces

  • Oil (if not using fresh coconut pieces, use coconut oil)


PROCEDURE:


1. Boil potatoes (6 whistles on medium heat if cooking in pressure cooker). Peel and mash. Set aside.


2. To a heated pan with 2 tbsp oil, add rai seeds, hing, 1 tsp haldi, green chillies, salt and mashed potatoes. Mix well.






3. Temper curry leaves in a separate pan (10 seconds in hot oil), add this to the potato mixture and mix well. Set aside to cool.



4. In a bowl, add besan, salt, 1 tsp haldi, red chilli powder and water. Mix well to remove all lumps. This is the coating for the fried patty so make sure it is not too runny or else it won't bind with the potatoes well.



5. Roll the mashed potato mixture into desired size patties (the size depends on the size of your bun).



6. Coat patties in besan mixture generously and deep fry until golden brown.


THE CHUTNEY:



1. To a heated pan with 2 tbsp oil, add garlic cloves, peanuts, sesame seeds, red chilli powder, coriander powder and salt to taste. Mix well and let simmer on low heat.




Meanwhile, in a separate pan dry roast fresh coconut pieces. (If that is not available to you, cook the chutney in coconut oil instead).



Blend everything together and your chutney is ready !


ASSEMBLY


1. Slice bun through the centre without splitting it in two.


2. Spread chutney on one side, add patty, close and press gently.



  • For fried chillies as accompaniment, slit green chillies and shallow fry. Garnish with salt and that's it!
