Tandoori Chicken Recipe

Tandoori Chicken may seem like an intimidating dish to make at home but you’ll realise with this recipe that it’s actually pretty simple. The only thing the recipe demands is Time - Marinating the chicken overnight in curd helps soften the chicken and accelerates the cooking process. Other than that, it’s only a matter of following the marinade recipe and grilling away. Enjoy!


INGREDIENTS:


  • 500 gms chicken

  • Oil for grilling


Marinade 1:

  • 2 tsp ginger garlic paste

  • 2 tsp salt

  • Juice of half a lime

Marinade 2:

  • 2 tbsp mustard oil

  • 1 tsp kashmiri laal mirch

  • 1 tsp ginger garlic paste

  • Salt to taste

  • Juice of a lime

  • 2 tbsp kasuri methi

  • 3 tbsp hung curd(helps soften chicken)


PROCEDURE:


1. Marinate chicken in 'Marinade 1' ingredients for 30 mins.


2. Next, marinate chicken in ingredients of 'Marinade 2'. Marinate for 2 hours to overnight. The curd in this marinade helps soften the chicken and accelerates the cooking process, so overnight marination will give you the best results.


3. Heat oil in pan/grill. Ensure that your pan is hot enough because if it isn’t, your chicken is gonna release all its water and turn soggy instead of developing a crisp exterior.


4. Drop chicken in the pan. Develop a nice char on all sides on high heat first then turn down to medium heat and grill each side for 10 minutes.


5. Garnish with lime and serve.


Best served with Rotis or Drinks :)
