Spanish Omelette Variation | Mince Meat, Cheese, Fried Potatoes & Onions

A hearty breakfast fit for king! My version of this Spanish Omelette recipe with crispy potatoes & minced meat is perfect for when you’re in the mood for something fancier than your regular breakfast. It’s sure to keep you full for longer and it’s yummmmm. Enjoy!


INGREDIENTS:

  • 8 beaten Eggs

  • Oil for frying

  • 2 medium sized Onions

  • 3 potatoes

  • 1 tsp black pepper powder

  • 1 tsp garlic

  • Salt to taste

  • Mince meat (can be substituted with other leftover dish)

  • 1 cheese slice


PROCEDURE:


1. Heat oil in pan for frying (2-3 cups)


2. Add 2 medium sized Onions (sliced) and 3 pre boiled potatoes (sliced)


3. Fry until crisp and transfer onto a plate. Set aside.


4. In a separate bowl, add 8 beaten eggs, 1 tsp black pepper powder, 1 tsp minced garlic, salt to taste, a slice of cheese and pre cooked mince meat ( I had leftover mince meat from the night before. You could replace this with any left over dish. If you have leftover bone-in meat pieces the you can always shred the meat and add it too ). Mix well.


5. Pour mixture onto a heated pan with 2 tbsp oil. Cook this side on low flame for 8 minutes (we are going to cook this side for longer than the other, so we have a nice crisp base. )


6. Flip and cook other side for 7 minutes on low flame.


7. Place a plate or tray over the pan and flip. Slice & Serve :)
