A spicy salad of glass noodles & potatoes that can be enjoyed as a condiment with any dish. The flavours are the same as the radish & cucumber pickle I've pup before (see here). In this variant, the glass noodles add an interesting texture. Currently in Gangtok, glass noodles are easier to come by than good old radish & cucumber so I had to improvise and it ended up so well I had to share it!
INGREDIENTS:
100g glass noodles
3 medium potatoes
3 cup ground sesame seeds (dry roasted)
1 tsp haldi (turmeric powder)
2 tsp red chilli powder
1 green chilli (chopped)
Juice of half a lime
4-5tbsp mustard oil
1/2tsp mustard seeds (yellow)
1tbsp Nigella(Kalonji) seeds
PROCEDURE:
1.Boil glass noodles until cooked. Set aside.
2.Boil potatoes, peel cover, dice into cubes and set aside to cool.
3.In a bowl, combine cooked glass noodles and diced potatoes. Add haldi, salt to taste, red chilli powder, juice of half a lime, chopped green chillies and mix well.
4.Dry roast sesame seeds on heated pan until golden brown and grind into a powder.
5.Add sesame powder to the mix. Mix well
6.In a separate dish, add mustard oil. Wait for the oil to smoke and once the oil is hot enough, add mustard and kalonji seeds.
7.Add to the salad and cover immediately with lid so as to allow the flavours from the tempered oil to infuse with the dish.
8.Open after 2-3 minutes and serve . Enjoy!
