Creamy Tomato Soup Recipe | Pressure Cooker Recipe


A creamy bowl of the goodness of tomatoes. Enjoy!


INGREDIENTS:

  • 6-8 tomatoes

  • 6 garlic cloves chopped

  • 2 thumbs of ginger

  • 1 medium sized onion chopped

  • 1 tbsp coriander stems

  • 1 tbsp turmeric powder (haldi)

  • 1 tbsp red chilli powder

  • 1/2tbsp black pepper powder

  • 4 clove pods

  • 2tbsp oil

  • 2tbsp butter

  • 1/2 tbsp sugar


PROCEDURE:


1. To a pressure cooker, add 1 tbsp oil.


2. Once the oil is hot enough, add tomatoes diced into cubes.


3. Add ginger, garlic, haldi, red chilli powder, pepper powder, clove and salt to taste.


4. Add water (enough to be on the same level as the tomatoes). Mix well and close lid. Let it cook for upto 3 whistles on medium heat.


5. Release pressure, open lid and mash the tomatoes lightly (we are going to blend this later so you don't have to mash it to a fine pulp at this stage)


6. In a separate pan, add 1tbsp oil and butter. Adding oil along with the butter ensures the butter doesn't burn.


7. Add chopped onions and coriander stems (the stems are packed with more flavour). Sauté for 5 minutes on low heat and add the cooked tomatoes mix.


8. Simmer for 2 minutes, then blend the mixture into a paste.


9. Strain the paste through a sieve to end up with a creamy and smooth puree.


10. Add mix back to the pan, add sugar and simmer on low heat for 15 minutes.
