Every house has their own rendition of the Dum Aloo and here is ours. A quick, easy to prepare recipe full of flavours & spices. Pairs well with not only rotis and rice but also bhujia for snacks!
INGREDIENTS:
5-6 potatoes
3 tbsp Mustard Oil
1 tbsp Kalonji (Black Cumin) seeds
1 tsp saunf (fennel) seeds
2 pcs Bay Leaves
1 tsp Kashmiri Red Chilli Powder
1 tbsp Kasuri Methi or Coriander Powder
15 Dry Red Chillies
10 Garlic cloves
Salt to taste
PROCEDURE:
1. Boil potatoes, dice into cubes and set aside to cool.
2. Boil dry red chillies with a sprinkle of salt. Add it to a blender along with garlic and 1 tsp salt and blend into a smooth paste.
3. In a heated pan, add 3tbsp mustard oil followed by Kalonji seeds, Bay Leaves and Saunf.
4. Add 2tbsp chutney paste and sauté for 2mins. (I add 2tbsp for a medium spicy taste. You could increase or decrease this quantity accordingly)
5. Add potatoes, red chilli powder, salt to taste and mix well.
6. Garnish with Kasuri Methi or Coriander (I prefer the former)
