Aloo Chura, a local street food delicacy is a spicy preparation of potatoes with various spices eaten with beaten rice and other toppings. Possibly the most craved and created snack of quarantine so far 😋
INGREDIENTS:
6 potatoes
4-5 tbsp oil
2 tbsp jeera (cumin)
2 tbsp saunf (fenugreek)
2 medium sized onions (finely chopped)
1 tsp haldi (turmeric powder)
Salt to taste
1 tbsp red chilli powder
2 tsp jeera powder
2 tsp dhaniya (coriander) powder
3 tomatoes (finely chopped)
3 tbsp coriander leaves
2 cups water
1 tbsp aamchur (dry mango powder)
Toppings (Beaten rice, Bhujia, Chana, Mama, Wai wai, Onions, Green Chillies)
PROCEDURE:
1.Boil potatoes (5 whistles on medium heat if cooking in a pressure cooker). Peel, dice into cubes and set aside.
2.Add 4-5 tbsp oil to a heated pan.
3.Once oil is hot enough, add jeera and saunf seeds. Let it pop.
4.Add onions, haldi and salt.
5.Once onions caramelise, add the pre-boiled potatoes, red chilli powder, jeera powder, dhaniya powder and finely chopped tomatoes. Mix well.
6.Add water and aamchur powder. Mix well and let simmer on low heat for 5 minutes.
7.Garnish with toppings of your choice- fresh onions, Bhutia, beaten rice, waiwai, mama, green chillies, crisps... the possibilities are endless.. Enjoy !
